I didn't check the weather before getting these two eight lb. butts ready for the smoke.

After rubbing with mustard and dry rub I realized that severe thunderstorms are supposed to hit tonight and tomorrow.

They are presently rubbed and double wrapped in saran wrap and resting quietly in the fridge in the garage.
QUESTION: I just bought these today - can I freeze them after they've been rubbed. And if not, how long will they hold in the fridge. I work midnights the next two nights. Friday would be the next time available, but even then I couldn't get them on until almost 12:30 in the afternoon. It would probably be monday as I work 12 hr shifts on the weekends.

I am absolutely no expert on the matter, but how about just turning the temp in the fridge way down?

If the fridge is ~40° and not opened often, the should be OK until Friday. If it's the family fridge that gets used several times a day and your run has a lot of salt, I'd rinse them off, wrap and freeze.

Ok the thunderstorms moved in with 20 to 25 mile an hour winds. So I pulled the smoker up right in the overhang of the garage and fired it up. I didn't really think I needed both butts so I decided to smoke one and freeze the other. Had a roll of gallon width, cut to fit bags for my christmas present- the food saver vac. So I left the butt double wrapped in saran, slid it into the the rolled and vac sealed it up. Then into the deep freeze with my other stash of butts. I'll freeze for a week or so and then smoke. We'll see how it turns out.

Butt #1 going on the smoker at 3:00 am

Butt#2 being sealed up with the food saver.

Supper tonight claimed my sons first lost tooth.

points for effort and for child's BBQ tooth trauma.

Pics of the finished product in the crock pot and spritzed with 75/25 mixture of apple juice and apple cider vinegar. Turned out awesome could have pulled it with a spoon but I had to finish it in the oven double wrapped in aluminum foil. The 20 mile an hour winds turned into 25 to over 30 really sucked the life out of the smoker, did get about 8 hours of smoke at between 225 and 250 though. Temps fluctuated quite a bit due to the wind.

amcjeeper you said that you did not need both of them but just an fyi they frezzer really good once they are smoked and pulled ....i do it all the time when ever i make one to eat for a party or something i allways do one more and put it in some small bags in the deep frezzer and then i got pulled pork on demaed it really works out nices......or maby doing it the way you did just gives you another reason to fire up the smoker
