UDS build question

Just picked a drum from a bakery that had canola oil in it so should not have too add anything to it when i season it should i? the inside of the drum is stainless so that makes it a kittle easier. On the outside of the barrel it is painted black, do i need to grind off the paint and spray it with high temp paint? Do i need a water pan? There is no holes in the lid so what type of exhaust hole would you reccomend? One more, if you do not have an access door how do you add wood chunks/ chips or do you not add any? Thanks for any help,I have never smoked anything before.  Between charcoal briquettes or lump is one better than the other in the UDS? Thanks again

  and since it had canola oil in it you're good to go just wipe it out so you don't have any excess to catch fire

Original paint is OK ,if you keep it within smoking temps it won't burn off

need of water pan is up to you. some use them some don't, ( I don't use one)

 for the exhaust you can drill or cut a 3 inch hole in the middle of it 

you don't really need an access hole to add fuel or wood chunks , just add enough fuel and wood chunks when you start
