Took and injected them with Cajun Butter. Then I took two heads of roasted garlic, two sticks of butter and a table spoon of Jeff's Rub. I saw this on a turkey article Jeff posted. I put it under the birds skin after it re-hardened. I rubbed the outside of the bird with some bacon fat my wife had held back from breakfast. Then it got a good coating of Jeff's rub

My wife wanted to try her hand at smoking, so she did some atomic buffalo turds stuffed with cream cheese, shredded Colby and mont. jack cheese, and a little smokey. Then wrapped them in bacon. 

Smoker is going at 275. More photos to come. 







 
Looking incredible but don't let the wife find out smoking doesn't take up all your time. She will tell the others.

that looks great, hope you got a few shot of the after.

I tell my GF all the time if we make something and take it somewhere, they will comment and I will make it sound like it was a lot, and she will be no it wasn't you put some seasoning on it an put it in the box and turned it on. But she is learning.
 
Just got everything off. Only cooked for an hour and forty five minutes. But the temps were where they needed to be. Haven't cut in to the chicken since it is resting.

The ABTs were pretty good. I may just have another smoker in the house. The spots on the chicken are from ABT over flow. But as my dad always says, it will eat. 








 
Stunning looking meal. Kidding around aside, it is so great to cook with family. Well done.

We tried the chicken last night and the meat was very juicy! The breast meat was the best. It really took on the flavor from the garlic butter. The skin wasn't so great. I would probably do a Greek seasoning on the outside next time and replace the rub in the butter with Greek as well. Happy Smoking to everyone!
