Two tri tips and it only Friday...

Happy weekend everyone!!
I started this weekend's smoking with two tri tips..one injected with butter garlic and coffee, rubbed with a coffee/cocoa rub...
the next one was injected with butter and garlic, then rubbed with raspberry chipotle rub..
I ran the smoker at close to 250 and pulled the tips at 135..these smoke so fast...I burnt my hand on the digi thinking it was not working properly since they got to temp so quickly...

Here they are going in.....

first one coming out..the chocolate one...really yummy...

and then the raspberry tri...

then I just have to post what goes thru a 15 year old's head...I just got one of those vac-pack things...here we go....

and now we have a happy face...I think I better hide the "sucky toy" for a while...lol!!!

I have to say the cocoa coffee rub is still one of my favorites with a big beefy hunk of meat...so yummy..and you can change it up quite a bit.. this one was injected also with garlic butter & coffee...

Looks great!! I personally pull all my tri-tips now. Just like a pork shoulder and the family likes it too. Here are a few pics.
 
Looks great all around, that's still a cut that I need to try. This brings home the point.
 
Nice looking pieces of meat, Chef Kel. Is that a smiley "tattoo" on Cabana Boy's tummy? Those foodsavers are powerful little suckers!!

The cocoa rub sounds really interesting and is something that sounds like a staple for you. Is that a homemade rub or something you can pick up at the grocery store?

I love the cocoa/coffee with a good hearty piece of meat! I make it up...its one of those, look, feel, smell recipes...lol!
I use raw sugar, prolly 1/4 cup, then same with kosher salt, then unsweetened baking cocoa prolly about the same amount then coffee grounds, I really like to use the cuban coffee..nice and rich a little less than the cocoa...i usually add at that point something for a little heat, smittys or cayenne pepper....
Next time I will pay more attention to what I am doing measure and take notes...
But Laurel you have to try it..you will love it..
I think it adds a depth of flavor, an incredible depth of flavor...

Congrats on two great looking Tri Tips, that Q shows when that cut is done to some tender and tasty slices. Still one of my fav cuts. Thanks for sharing.
 
Don't know how I missed this thread, but those tri-tips look great!!! I'm hooked myself, they don't take long to prepare and the flavor is awesome.
