Turning Pork

    This is probable a dumb question but do you turn PP during the smoke? If so how many times?

    what about a ham???

    IMO depends on your smoker, if you got a hot spot or something that necessitates a turn then it kind of makes you do it. Otherwise, I put them on (any meat) and don't mess with it.


    I know some say fat up/fat down to start and flip part way, etc. but to me it doesn't seem to make a difference.

    I dont flip a pork butt,

    in the past I have done fat cap up, but am going to try the fat cap down this time since I am doing my first pp on the WSM.

    Chisox post made me think of one other thing FWIW.........I always try to put the fat facing the heat source when possible (fat down in WSM) so if something happens and the heat gets away from me I have more protection for the meat.

    I don't turn in my smoker, however if you have hot spots you might need to. I would just look at it and if something looks a little different on one side verses the other then rotate or flip.

    thats what I had heard, so I was going to give it a try. Even though in the 20 or so smokes I have done on a WSM I have noticed it holds temps in the low and slow range masterfully. Thats why I had to have one of my own.

    I have never flipped pork butt, using a water pan in my GOSM I get pretty even heat, no hot spots to worry about. I have done it fat up and fat down and not seen a difference.
