First attempt at turkey on the MES. EVOO, pepper and thyme. Smoking at 225, gonna take them up to 165 internal and rest for 20 minutes.

Yup it's possible. They don't take very long when I do them either - usually around 2 1/2 hours unless I crank it up to 297* toward the end for the skin... Just make sure you're probe is in the center so you get an accurate ITHoly cow... 1 hour in and I am at 135* IT. Is this possible? I was expecting 3-4 hours on this.
