turkey smoker temp

    i have read many different posts on smoking a turkey 225 degrees or 325-350  could i get opinions between low or high and why???
     
  2. Low will allow more time in the smoke so more of a smoke flavor rubbery skin.

    Higher temps it cooks faster and will have a crispy skin.

    I'm considering about 300-325 for my turkey.  I also plan to spatchcok it as well.

    You can also combine methods. Smoke at 225-250° to an IT of 140-150 and finish to an IT of 165-170°F in a 425° Oven. Low an slow and crisp skin...JJ
