Ok so I brined an 11 pound turkey overnight and put in smoker this morning but encountered problems getting smoker above 180 for 3 hours. Not sure if that is because it's only 25 degrees out or if there is a problem with my smoker but that is a problem for a warmer day. So I pulled turkey and put in roaster hoping to reach 140 IT before 4 hours has past and did so successfully. My question is whether this is safe as long as 140 in 4 is achieved regardless of the fact my smoker temps were so low for the first 3 hours? IT of bird was only 100 degrees when it went in the roaster.
 
I thought so, just wanted a second or third opinion for reassurance.
