Turkey on the Smokin-It #3

    Started with a 14 pound bird (minus the gravy bag, neck and giblets) so probably 12 pounds...

    I brined overnight with brown sugar, salt, and a little cure.

    Into the smoker at 12:00 today with hickory and pecan chips...

    Out of the brine to drip dry...

    Cold here in MN today...12*F.
