I'm smoking my 1st turkey which I stated at 9am. Smoker is set to 275 and I'm 2 hrs in and have a internal temperature of 143deg. Any thoughts or suggestions? I dont want a dried out turkey.
 
Breast 150 on the prob. So this will only take 4-5hrs to be done looks like we will be eating at halftime of the Ohio state and Michigan game. GO Buckeyes!
 
Not to be super pickey but the USDA say's min safe temp for poultry is 165. There is no distinction between breast and thigh. Most people 

will take the thigh to 170-175 for color reasons but not for safety. Myself I do 170 in the thigh but as long as you hit the 165 IT your fine. Also 

165 is allowed with no rest time. Everyone does rest poultry (or should in my opinion) but it is a personal choice :)

I follow the GMG recipe for turkey's EXACTLY. Best turkey ever... Some will say it's out of the norm....I say BS. GO DUCKS!
