Turkey Legs Tonight

So I decided I would smoke some turkey legs tonight.

Got up this morning and made brine for the turkey legs.

Sorry no picture of that. After soaking in the brine for about

6 hours, I took them out and rinsed them off then pulled skin back

and Rubbed them with a poultry rub I found on the internet.

3 Tbs onion powder

2 Tbs paprika

1 Tbs garlic powder

1 tsp course ground pepper

1 tsp ground cumin

1/2 tsp rubbed sage


Then pulled skin back up and over legs and used a light coat of

Butterball's Cajun Rub.


Then just to try something different for me, I put some alder pellets in 

my amnps. and now just let them cook.

Wow that sounds awesome. Was trying to think of something to cook tomorrow, this might just be it. How long did those take and what temp you smoke them?

This is relevant to my interests. I have 8 legs in brine right now. Never thought to season under the skin like they. Looks awesome.
