Received a new stainless steel injector for my birthday. And as it’s almost turkey day, it seems like the ideal time to take it for a test ride. Any ideas for injection liquids? I’m thinking liquid (beer, wine, stock?) fat, spices. Any ideas. Only limit, no butter or dairy. Input / ideas appreciated
 
No sugar added apple juice/water-50/50 and simmer with typical poultry herbs/spices to infuse then strain. Tough one with no butter/dairy...I always use an apple juice brine so a normal brine recipe would work also.Just strain it well as it will clog the needle.
 
I cut my bird into legs and breast removing the spine. I quickly brown the spine, neck and giblets in a 425 oven with some veg and make a turkey stock. This stock is used in the gravy, dressing and a couple cups are mixed with 1Tbs of my Rub while still hot. Once cooled, I inject this flavorful liquid all over...JJ
 
Thanks for the suggestion, but as I keep kosher, no dairy with meat. Anyway I tend to not use pre-made products in my kitchen. Make most stuff myself. I know what’s in it and frankly tastes better.

If you make the stock...Inject some Schmaltz instead of olive oil. Way better flavor. Whisk the schmaltz in to your injection liquid well to suspend tiny droplets. These won't solidify in the cold injector needle...JJ
