Turkey Day Pregaming

    I had a salad the other night with cranberries in it, wishing I was really eating a Capriottis' Bobbi. (Thanksgiving dinner in a hoagie roll) Then I got to thinking, perhaps a smoked (or grilled if time is an issue) turkey burger with roughly the same ingredients would do. I found one recipe  http://allrecipes.com/Recipe/turkey-burgers-with-brie-cranberries-and-fresh-rosemary/detail.aspx  that looked similar to my thoughts, except I wouldn't use the cheese.

    My other thought would be to use stuffing from a box with some cranberries in it and mix it in the turkey burger meat.

    As for the wood to use, I was thinking mainly apple or cherry. Perhaps some hickory or maple to round it out.

    Any other suggestions? Ideas?

    Definately not a replacement for Turkey Day dinner! But the goal is next best thing. 

    I'm thinking/hoping for either a smoked or fried bird this year. Not sure which yet. Either way, there's going to be some smoked stuffing.

    Have you ever smoke a turkey ?
    That the best way to eat one !!!!
    Nothing better then smoke turkey.

    I did some food prep tonight and got two things accomplished with this project. I made up the burgers and the stuffing. BTW- I'm using the store brand cornbread stuffing. On the stuffing, I heated the butter, but did not stove cook it like the directions said.

    I intentionally didn't mix the meat and stuffing very well. That way the flavors are more noticable. I couldn't help but notice that the cranberries look like chocolate chips....

    Right out of the smoker. I knew they probably weren't done, but I was afraid they may get dry if I left them in longer. I finished them in the oven.

    They came out very nicely. I finished them with potato rolls, mayo and a slice of american cheese. I really didn't notice the stuffing. My wife suggested that next time, buy a stuffing with more flavor. I may just skip the stuffing and put in some golden raisins. The cranberries were nice and I think raisins would compliment them well.

    I had the leftover patty tonight. It was pretty good, but there were parts that either did not reheat well or were dried out in the smoking process. To me, this indicates that a mop is required. My initial thought is to use vegetable oil. But I think there must be something better to use. Does anyone have any better ideas?
