I finally made the time to use the carcass I saved at the last turkey smoke. I used a variation of one my childhood soups - ham hock and greens (eastern European).
Chopped some Tuscan kale and collard greens
Cooked the bones for about 3.5 hours
After picking the meat off
Greens blanched then added to the pot; pic taken 30 min later
Finished with sour cream
Lemon or vinegar will be added in the bowl.
