Hello I plan on smoking a Turkey in a few days.
I've been reading about the problems with getting it up to safe temp in time. I have an 18 lb bird. I was thinking about adding insta cure I have into my brine . I was wondering if the insta cure would give me some ins. I will have some other stuff on the smoker ( I have a big smoker )
And didn't really want to hit 300 degrees and up.
I'm able to hang the Turkey in the smoker don't know if that's a helping factor or not. I was just trying to think of a way to not have to pull the turkey and finish it in the oven.
 
Or , Spatchcock the Bird and cook as two 9 lbers. ,Got a big Smoker?  Get a big Ham or Roast to help hold heat and expand the meal.  Veggies , Mac and Cheese, etc.

I got a big one too , and (if Trish lets me out) will do a Turkey and everything I can grab to go with it...

I have a 500 gallon smoker. I plan on doing a ham , leg of lamb and some deer back straps as well . I appreciate the feedback thank you.
