Smoked a 7 lb turkey breast. 3 1/2 hours in a brine consisting of:

1 gal. distilled water
1 cup kosher salt
1 cup sugar
Worcestershire, garlic & onion powder, sage, thyme, and rosemary.

Cooked it over apple wood in the drum @ 325 for about 2 hours 15 minutes..

Very juicy and tasty! The dark spot on the bottom slice is from the juice on the knife.. I'm going to let it cool down for a bit, refrigerate overnight, and slice thin tomorrow..

Looks tasty, and nice smoke penetration, with poultry it is so much lighter and then even more so looking when you snap a pic.
Love smoked turkey....I have ribs on right now and would love to swap you a plate for a plate.
 
im getting ready to do some boneless thighs today and a 8lb turkey breast tomorrow....cant wait....hope it looks as good as yours
