I know all you guys smoking turkeys made Turkey Bone Soup,  if not you should.

Very easy, I don't do recipes but you don't need one.

Take the bones and skin trimmings left over from your smoked turkey place in pot and cover with cold water. Boil a couple of hours until the bits of meat on the bone are easily removed.  You should have a nice brown color to the broth.  Place broth in fridge overnight and skim fat from surface.

Saute chopped onion, celery and garlic.  I used olive oil and some home smoked bacon fat. Once the vegs are soft and translucent spoon in your broth (should be good and jelled after being in the fridge) and simmer for about 30 minutes.

Add any leftover turkey meat you have, any canned vegs you like (I used corn and greenbeans) and continue to simmer.  I had some leftover flat noodles from last nights lasagna so I cut them up and added just before serving.
