I thawed some thighs today and what I think are turkey breasts, but maybe chicken breasts, my bad as I didn't mark them.






I finally cleaned the damned window on the MES.

Using Hickory at 275'.

Damn you Ron!
A week or so ago I couldn't handle posting wrapped thighs, these delicious pieces of goodness and decided to try them.
Don't you know the next day weather was terrible and in no way was I able to smoke so I have yet to try these tasty morsels.
I would do them tomorrow since the weather is perfect for smoke but part of the smoker is out getting modded so no smoke for me (except what I have in fridge and freezer) until probably Thursday.
Thanks for posting this. You have no idea how bad I have been aching to give this a try.
Did you TQ them first? Noticed in several posts that you cure them (such great flavor with the TQ) and wondered if you did with these. That was my plan when mean Mother Nature pulled a trick on me.
Of course I did my temporary final smoke tonight and didn't even think to pick up any chicken.
Looking forward to another tasty Qview.

Yes I forgot to mention I used TQ for about 8 hours and rinsed. 1 Tbs per pound. I hope you finally try it you will be hooked.

Those are definetly awesome looking and now I'm gonna have to try and cure some for the family. They like birds. Thanks again for yet another good idea keep it up.

Well there was a question tonight on chat about the 40- 140 temp rule, don't know why. These took 2 hours and you can see the time stamps. Also the difference between brining and curing.

I did a comparison a while back and here are the results. A big differince.
One on the left brined and right cured in TQ.
You be the judge.
 
I think the one on the right looks juicier, however they all look great...
