Hi from Australia
Does anyone have a good dry rub for some prime tuna steaks
They will be cold smoked only in a controlled environment
I have done salmon with a couple of dry rubs and works fine (tastes fantastic) so should I use same method
Any help will be great

Sorry I just seen this if you had good results with the Salmon I would do same with Tuna maybe go a small amount in case it doesn't turn out. Good luck and let us know.

A full smoker is a happy smoker

Tuna is a more robust fish than salmon, and can better stand up to herbs, spices, and other aromatics. Take a look at my current thread on Zanzibar Tuna, for an example. The flavorings there can easily be used as a dry rub for smoking purposes.

Here is the dry cure I've used in the past for  stronger fish:

2 lb salt

1 lb dark brown sugar

2 tbls saltpeter

2 tbls garlic powder

2 tbls crushed cloves

2 tbls onion powder

2 tbls crushed bay leaves

2 tbls crushed allspice

2 bls crushed mace.
