Tuesday's a good day for a BBQ!

    Today seemed like a good day to fire up the pit seeing as it's Tuesday on a hot South Texas day.

    Asked my local HEB butcher for some uncut beef short rib, I was not expecting much, but she did not disappoint!
    Also had some bone in chops as well as some boneless chops or as they're known down here Texas Ribeye's
    Also picked up a rack of baby backs, set the pit to 250 and here we go!

    After 2 hours at 250 smoking on hickory and pecan, the chops were ready to go.

    By far the best ribs I have ever made!
    The pork ones came in a little over done but good none the less

    Total cook time 4 hours

    Those beef ribs look good! I've seen them in the grocer but wasn't sure what to expect (nor how to approach) - I was sceert basically! May have to give those a go!

    Very good looking cook . Dang those are good looking Ribs :drool , heckof a good ring .

    Not to forget the Chops , they looked awsome Thumbs Up
