Wife drug me to the store with her yesterday and I happend to stumble across a sale on tri-tip. whole untrimmed for 2.77 a pound. so I picked up six of them to do some experimenting. I usually use salt, pepper and Garlic but wanted to try something different as well as smoking them all night which I hadnt done before. I rubbed one of them with the Traeger beef rub and the other with the traeger beef shake. Both were wrapped in plastic and set in the fridge a little past noon and removed from the fridge at about 9pm. I fired up the treager at about 11pm and at 1130 placed the tips on using the smoke setting. I checked on them at 630 am and the internal temp was 133 degrees. flipped them and let them set for an hour before turning up the smoker temp to 225. I pulled the meat when it reached a temp of 145* wrapped in foil, then a towel for an hour. THe flaver was awesome. The meat very tender, but next time I will pull at 135*.
