Gonna give salmon a try for dinner. Brined it for about 4 hours, made some of Dutch's sauce (had to modify it as I didn't have some of the ingredients), and have had it smoking for the last hour/hour and a half at about 190. I'm keeping my fingers crossed that it'll turn out.

Good smoke to you all.

edit: smoking it on my Masterbuilt with some RO lump, alder, and a dash of cherry...

Salmon is pretty forgiving so I am sure it will turn out great.
That's why I love it, no worry dinner!

Alright...finished up and it was delicious! The sauce was fantastic! Thanks Dutch for sharing that! Very nice and flavorful! I did...well...sin, however. I was out of lump and my temp started dropping so I...um...well...finished for 20 mins in the O**N.

Good job!! I love smoked salmon.

If you have any left over, smoked slamon makes a fantastic fish spread. Just mix the salmon with some cream cheese, chopped celery, and put on a cracker with hot sauce, so good.
