Hi new here , recently got a masterbuilt pro electric analog smoker, have done ribs , candy salmon, chicken halfs, and in the middle of doing jerky so far. All have been excellent. However I am having trouble getting the chips to burn. I have even started cranking it way up and when I start to see smoke I turn it back down to desired temp and insert meat. I check my chips an hour later and they aren't burning at 200f steady temp?

I have the MES 40 and I don't normally create any smoke under 225.  Even then it is hit and miss until 250 or so.  The only time I use the internal chip tray is when I do chickens or turkeys @ 275.  When used I have to refill the tray often as it creates a lot of smoke and no TBS (thin blue smoke.)  There are mods out there to help with the smoke but IMO the best option is to order a AMNPS from amazenproducts.com.  TONS of people here have ordered one from Todd and he has AWESOME customer service and fast shipping.

Best of luck,

EQ

Good afternoon and welcome, I am not an electric smoker, sounds like you already got some advice. Bearcarver is a pro on electric, you might ask him for a few tips.

I vote for the AMNPS. Tried a few times with the chip tray in my mes40, it was as stated earlier, hit or miss. I ordered am AMNPS and love it with the mes smoker.
