Trimming Butt Fat -- Safety Question

I recently purchased a couple netted boneless butts (thawed).

I was wondering if there were any safety issues to be concerned about with trimming the fat (as in prepping to smoke) PRIOR TO freezing them for the next smoke session vesus just freezing them now and trimming later?

Are there any "carneologists" (butchers/meat/food safety people) out there that can contribute some insight?

Bill if they were frozen and thawed,I would not refreeze them until they were cooked.
 
Thanks, but no, they were not frozen when I purchased them.

Lyndhurst, huh? Me? Born and raised in Camden until we escaped to Woodlyn, then Oaklyn, then Atlantic City. I left AC in 1972 when I joined the Army. Came back to Browns Mills and Mt. Holly. Also lived in Ocean (near Eatontown) before moving to the midwest in 1987. Did 3 tours at Ft. Bragg, NC and 2 tours in Germany (9 years). Retired with 7 years active and 30 years civil service.

Bill leave the fat on, it is flavor when you BBQ, and it helps keep from getting freezer burn.Thanks for your service I am heading up to Ma. tomorrow. The great escape LOL
