Tried a new salmon recipe for dinner

I decided to break out the grill after work and do some small salmon fillets I had for me and my son.  He's a very picky eater, so I wasn't sure if he would like it, but he called his mom to tell her how good it was.

The rub:

3TBS of Dark Brown Sugar

1TBS of Chili Powder

1TBS of Cumin

Salt and Pepper to taste

I then rubbed the fillets with olive oil and applied the rub pretty liberally.  Slapped them on the grill flesh side down for 3-4 minutes and then flipped them skin side down for 4-5 minutes to crisp up the skin.  Super easy to throw together and they were a hit with the pickiest eater on the planet.  I was initially worried about the taste because the cumin smell was pretty strong in the rub, but once it cooked, it simply added great flavor and wasn't overpowering at all.  They still tasted like salmon, just really good salmon.

Many commercial chili powders already have cumin as one of the ingredients.  If you are worried about too much cumin you could substitute 1 T of another herb or spice in its place.  I'm not the biggest fan of cumin and that is why I make my own chili powder where I can control the amount of cumin in the chili powder.

I'm glad it worked out for you and the cumin wasn't too strong.
