Went to Costco to get some tri tips today...



$4.39/ pound, 20.8 pounds (eight tri tips)/ $91

Pulled two to season



Salt, cayenne, ancho chili, dry mustard, paprika, black pepper, white pepper, onion, and garlic









Vac packed the other six

Looking good so far.....I really like TT's and am a BIG fan of the Costco meat & pork offerings. Although, I've never done the whole bag b4 lol. Looking forward to the details and more pics of the finish....Willie

On to the smoker @225





Using hickory chunks, apple chips and three kingsford charcoal briquettes...
 
On at 4:00, off at 5:30 with an IT of 138...



Wrapped and into the cooler while the Mac and cheese cooks at 250 for an hour or so...
 
Sliced it up...

















Very tender, moist, a little bitter should mellow out for Sammie's tomorrow.
