I had a chance to listen to some podcasts this weekend while traveling around. I found this one from Table to Farm to be interesting. I don't fully agree with the end cooking process, but learning more on the beef industry was good.

I'm sure it will. I really liked how my last one turned out (pictured above). I trimmed the fat off and seasoned with SPOG. Cooked at 265* pulled at 135* foiled for 30-40min. Didn't miss the fat at all and getting more of the rub was awesome!
