Tri-Tip never Again

If you got any left or that type of Tri-Tip is the only option...FAJITA's !!!!...I marinate Flank steak and Skirt in Red Wine Vinegar as the bulk of a well seasoned marinade over night. You taste it but with the toppings works very well...JJ
Thanks I froze what was left and will give it to my kids up in Ma.

I too live in California and tri-tip are as common as ground beef. Lots of places, including some great specialty stores, sell pre-marinated and/or pre-seasoned tri-tip. My experience is that even when I purchase from places that have the best meats, or from places that also sell smoked products, the pre-marinated products are absolutely awful and even the pre-seasoned are not great.

The reasons?

Simple:

1. They sit in the spices too long.

2. No one has rubs that are as good as what you can make yourself.

Since applying a rub takes only a minute, and even marinating is quick, there really isn't much reason to purchase anything other than the bare meat.

However, since you can only get the marinated version of tri-tip, perhaps you should look at this page which provides alternative names for the same cut:

Perhaps you really have it, but it is packaged under a different name. If you do manage to find some, I recommend either Jeff's original rub or Jeff's Texas rub. The recipes for both can be purchased directly from Jeff.

Yeah, "Picana" doesn't appear on the list in that link I gave.

The alternative, suggested in that link, is if you can't find tri-tip under any of those other names, ask a few butchers, preferably a butcher at a specialty shop rather than the guy who just cuts up meat in a supermarket.

We have Price Chopper here in Central NY and they've started selling them for $5.99/lb but before they offered them I was buying them from a local meat market. They were getting $9.00/lb. Maybe you can find a butcher locally?

Walmart had them for a short time. Wegmans here has them but are expensive.

BTW, yours looks very good.

Richie, if you can find a good meat man, tell him you are looking for the NAMP/IMPS BSB 185C or 185D.  The "C" is untrimmed with the fat cap intact, which is my my choice. The "D" is well trimmed with the fat cap removed.

They are on sale here this week for $2.99/LB.  I have seen them as high as $8.50/LB, but prices have moderated.  One of the things that originally helped their popularity was that they were a "decent" cut of meat for basically the price of hamburger. Since they have become more popular, the prices are higher.  Particularly in the East, from what I see on the forum.

I really wish you people back east would stop buying them.  You are driving up the price!!

I've never seen one, and if I did I'd keep buying my Prime Rib, because it's cheaper in PA than the elusive Eastern Tri Tip.

They don't have them here in the meat case either, Richie, but a good cutter knows what they are and will cut one for you if they have something to cut from. It'll cost you, though. I can't believe there aren't meat cutters there who'll do it. I've done a couple to see how they are and yes they are good, but for the price, frankly, I'd rather have Rib Eye...
