Had this rack and chunk of TT in the freezer. Been looking forward to smoking them. Hard to rank, but TT and ribs might be my top two favorite smokes so why not combine them?

Going to be home all day removing Christmas lights so a perfect time to smoke. Smoking with combo of pecan and apple for the first time. TT rubbed with Tatonka Dust.

Ribs and TT rubbed and ready!

    Ribs on first

Ribs coming along and looking good. Smells awesome.

Wanted to try something so I wrapped the ribs. I reduced a grape, apple marmalade and added some water, then wrapped the ribs in it. We'll see if it make much of a difference. It probably won't but worth a shot.

    Tri Tip baby

    Tri Tip all done.

Rib unwrapped and looking more than yummy!

Well, they're all done and ready to be eaten. I have to say, not bragging, but I really nailed these ribs. Yeah, I'm hungry so everything tastes better but this is a top-3 smoke for me.

Tri tip - always a good smoke.

    Thanks and Happy New Year!

Than you kindly farmer. Everyone was satisfied with this meal and, well, I over ate! Ha-ha

Thank you Justin. What a super combo for sure. This time the ribs unexpectedly outshined the beef!

Mine has lasted me quite a while. I'm glad I have some as it really works well on TT in my opinion b-one. Hope your doing well.

  7. How long did you cook your ribs and at what temp?  Rib seem to be something I just can't perfect, I have the sausage making down pat but seems like I just never can get my ribs to look like yours LOL! Looks great by the way.

Thank you Case - Tri Tip left overs today!

I haven't tried hot wings yet so I have something to look forward too. I'll follow your recipe when I do.

    Hi Kovaku,

In this case, I smoked for 3 hours, wrapped for 1.5 and back on the smoker for about 30 or 40 minutes. I kept the temp pretty consistently between 220 and 235. I did have a quick flare up to 245 but I don't think it affected much. I did have smoke going the entire time.

Just keep practicing and you'll get it. Ribs are awesome and I prefer baby backs.
