Tip went over so good last week that my wife requested it again for Mother's Day (lucky me - not just because of the meat but for a perfect wife.) Bought a 2-pack at Costco. Ready for a rub All rubbed up (SPOG) Into the WSM she goes. Should take around 3 hrs. 1 hr in 2 hrs All done with a reverse (not so good looking) sear. 3 hrs on the money. IT of 144 (that's a good temp to suit everyone's tastes) Juicy and VERY tasty. Tri tip, the best beef next to a nicely prepared brisket? Perhaps. Have a bite!!
