be tough to use the heat exchanger, you will need a boiler to run steam, or heated oil or some other liquid or gas through it. It would Make a complex system for sure. It would be wicked cool, but large, and might need a boiler ticket just to smoke bacon. hahahaha
 
Well I thought about using it as a cooling system. Running an open loop of ice water. At least to cool the intake air. But it's agreed, too complicated.

I took the heat exchanger apart yesterday and have a pretty good plan for the fans.
 
I'm going to redesign the chimney a bit. And the fans will be on a quick detach base that will slide and lock onto the chimney. I will need to find a 120 v fan speed control. The fans also have plugs that connect the power leads to the fan motor, so I can easily disable one if 2 is too much.

The fans will aid in cold smoking by keeping a draft for the amnts, and helping to keep the chamber cool. They will also enable me to dehydrate foods.

I think it will be a sweet little accessory.
 
Progress going slow. Have a big remodel competing for my time. Managed to bend up some stainless steel and cut some new stainless pieces to hold the inner tub to the outer shell. Have to totally redesign the doors/seals now which also involves adding new door latches. The magnetic strips are shot. More more more work to do
 
Hello Nevrsummr. Have you made any progress on this? How hard is it to remove the sides to get the insulation out? I'm supposed to pick up one of these tomorrow, but now I'm having second thoughts. Thanks for any info.
 
Yes in fact I have finally finished it. And am using it regularly now. It is working super! Really happy with the product as well. So far I have done 2 pork butts, jalapeño cheese pepperoni sticks without the casings,and 2 batches of cheese
 

Fits 8 - 2 lb blocks of cheese on one rack. Pictured are: sharp cheddar,extra sharp cheddar x 2,extra sharp white cheddar,manchego, and gouda x 2, I am hoping to make a batch of casing less sausage with some of it instead of low temperature cheese, as a test. We will see how it goes

Did you re insulate? How did you take it apart? Im about to run into the same problem i think. Pretty upset about it.

Ok! Don't lose hope. You have a nice setup there!
First go around the door openings and take all the screws out and remove the pieces that hold the inside to the outside. Take your doors off and lay it down on its front. There should be 2 seams that are tac welded down the back side. Use a skinny flat pry bar and hammer and drive the pry bar lengthwise down the seam. You will feel the tac welds and will have to drive the pry bar through them. Once you get both seams separated the whole thing will come apart. Inner tub should stay together as one piece. Your door seals will melt and will have to go also. Hope that helps

Two hrs later ive almost got one wall off. Metal tears really easy. Trying to be gentle. This is an absolute NIGHTMARE.
