I grew up working in the charter fishing industry in Depoe Bay Oregon. Every year the community comes together and does several fund raising events sponsored by the Chamber of Commerce. Every September they do a salmon bake. I found this article with a great video of the process. Every year when I lived there I worked the fire line. We used to get the fire going around 5 am. Was the best job on a cool morning. All the splits, of alder used as well as all of the poles and cedar are cut locally by members of the community. The salmon are all locally caught from the commercial fishermen.
