What can I do to make my sausage casing come out more tender? As it is I can barely bite through the casing when it's done.
 
Where did you get the casings from and what kind... Quality of the casings can produce tough chewy sausages along not rinsing enough to remove the salt or  high temperatures and over cooking for long periods of time...... Are you talking about the ones you did last week... The casings look different from what I use....

I bought the casing at a local grocery store from the meat market. It's the same casing they use to make the sausage in the store. I bought the whole hank in brine solution.

I smoke it at 135 for an hour, then 145 for an hour then 165 for another 4 or 6 hours till 152 IT.

I run water through the strand to rinse then soak for an hour or so.

Yes the ones I did last week and several batches before those.
 
My question is, What type of thermometers are you using and are they accurate?
 
have you tried their sausage and was it chewy also
 
I am using cheapo thermometers but I use 3 and they are within 3 degrees of each other so I believe they are accurate.

I have tried their sausage quite a bit but it's only fresh sausage. They don't smoke any. I usually smother it or bake it at 350. It wasn't chewy but it's kind of comparing apples and oranges on that.
 
I would soak them for a full day next time changing the water frequently trying to remove the salt and I would try to pack the meat a little tighter in the casing.. A loosely packed casing will make it chewy........

Check your thermos in ice and in boiling water to see where they really are, regardless of what you're using them for.  A few degrees can sometimes hurt you and it's best to know where you are...

Now, about the casings, try a Tbs of ACV in the bowl of water you soak the casings in AFTER rinsing them of salt.  That has helped me quite a bit over the years.  However, if you are going to be stuffing all day, or for extended periods, try not to soak the casings for longer than one hour with the ACV added since it could lead to casings that are too soft and could burst while stuffing.

I'll soak some over night and some for about 45 minutes with a little acv then see how they turn out. Thanks for the help

x2.  Soak them overnight at least, then flush well.  You can also add a cap full of vinegar.  Another thing you can do is to poach them when finished smoking.  It rehydrates the outermost layer a bit.
