Hello everyone,

I am three years from retirement, I hope, with two kids still in college. I am looking foreword to the time when I can spend 12 hours cooking a meal and not feel I should have been doing something else. I have never used a smoker, but as with all new things I suspect it is best to begin with a simple, fool proof recipe and grow from there. I recently purchased an RV, (a vintage 1978 Bluebird), and plan to spend a bit of my retirement on the road, so a smaller, portable smoker is the way to go for me.

So I will probably be a lurker for a while untill I have read up on the subject and have a better idea of the possibilities.

Welcome to SMF!!! My recommendation- Jump in with both feet... There are many reciepes that only take 4 to 5 hrs. and you dont have to baby sit it if you get the right smoker...

That's the beauty of smoking....you really CAN be doing something else while your masterpiece is simmering away in the smoker. Other than at most, checking on it once an hour....you can be doing whatever else your heart desires.
