I'm a cajun from South Louisiana and now live in  Natchitoches, LA and am getting a Professional Char Griller duo 5050 with fire box for Father's day!

I've always wanted a smoker pit and am looking forward to learning how to use this grill! I already noticed all the mods that guys are doing! WOW! I hate that every time I cooked anything I was battling flame ups and charred meat! My wife and I are planning on doing 

briskets, ribs, roasts and whatever else! Thanks for being patient and welcoming me!
 
Hello and welcome from East Texas, don't forget the Boudin    My wife would never eat boudin till I started smoking it, every time I smoke we always throw on some boudin.

Howdee Howdee ..... like that name! Wait,  Natchitoches? I thought you said south Louisiana, isn't that north of I-10? J/K

When ya get some time, click on the icon, "My Profile" on the above taskbar and tell everyone as little or as much as you are comfortable sharing. The location is great because other than me, no one will be able to remember, so they'll keep asking in discussions and it'll get old answering quick.

Hope ya enjoy the site, if ya need help just ask, everyone loves to share. And there is never just one perfect answer in smoking, everyone just learns how to manipulate their own pit to do it there way. And we love to talk about it when we are not actually smoking.

Don't remember my previous post but I am from Eunice and college years LSU and USL
BOUDIN. Country! Anyway I seasoned my entire pit top to bottom inside and out
My firebox has huge gap in door
CG is gonna warranty it! That's awesome!
Need to find wood, find a rub and figure out what to smoke first
I can't even find 3" vent! Only 4 " up here!
