Matt here from Houston, tx. Completely new to smoking, meat that is. I had a few beers a few Monday's ago and some how landed on the qvc channel, which I never watch, and they were selling the mes30 gen 2. Couldn't help it and bought one. I know the wrong one but have already modified it based on info from this site. . I love to grill so this is a completely different world to me. I've been all over this site and have found a ton of useful info, great ppl here. I've already ditched the thought of using wood chips and picked up the amazin pellet tray. Plan on doing my first smoke this weekend at the beach house, just not sure what I'm gonna do. Plus I have all next week off to experiment. Any newbie tips or easy ways to get this new addiction going would be greatly appericiated. Love this site:grilling_smilie:

Great place to learn new skills or hone your old ones. Totally amazing what is stored in this site. Nose around if you have a problem or a question  just post.

Remember there is no one definative way to smoke meat. You continiously modify and try new ideas. The only perfect smoke is the one you you are eatting now.

Suggestion get a journal and keep notes on each smoke good and bad. You'll apprecaite it someday.
