Hello, SMF! As the thread title says, I'm a total noob to smoking. I'm a part-time farmer, trying to be as self-sufficient on food as possible. Since I just slaughtered a pig, and plan at least one more before the weather warms up, I need to get to smoking! I actually have some cured bacon in the grill, with a homemade Amaz-n type basket of hickory trying to get some flavor going. I hope to build a decent cold smoker to handle cased sausages, bacon and hams. This looks like the best source of experienced people on the web, so I hope to learn lots!
 
Thanks! 16 years National Guard, 12 as an AGR (fulltime active Guard) supply sergeant. I'm about three hours north east of Ft. Campbell, in Harrodsburg. Did spend nine months at Campbell, mobilized as installation security while the 101st was bust invading Iraq, in 2003.

Just noticed you are in Huntsville. I used to go to a swapmeet down that way, in Toney. I was really into Pontiac Fiero's, and one of the best shops for them was the Fiero Factory there.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Gary, its just cold here in Kentucky, at least today. Just survived a week of 16" of snow, and -22 temps.
