I decided to do a pork shoulder on Sunday. I had heard from several people that it is really not necessary to apply rub the night before. These people apply the rub right before they place it on the smoker. I decided to just take the shoulder out, brush with mustard and heavily coat with Jeff's rub.
I didnt get a picture before I put it on the ECB. I did get one at about 5 hours which is right about when I foiled it. Kept it on till it hit 205F. Then put it in the cooler for a couple hours. I put a mixture of pineapple juice, fresh garlic, Worcestershire, cracked pepper, and olive oil on the shoulder when I foiled it. I could not tell any difference between applying the rub right before versus overnight. Therefore, I will be applying my rub right before (it's just easier).
