Hi all,
Yesterdays smoke was long. If nothing else it was definately "Low and Slow". When I woke up there was a little breeze. Before long we had winds blowing 20-25 mph with gusts to 30. I had a hard time maintaining temps in the 210-220 range even though I tried blocking the wind. Put the two butts and three racks of ribs on about 9:00 AM. Put the two yard birds on at 11:00 am thinking we would have them for supper last night. Because of the wind problem, the chickens took longer than expected so we had the ribs for supper instead. The ribs were left uncovered for two long before we wrapped them and they weren't as good as my last batch.
Also, I let my water pan go dry which didn't help matters much. Added more water.
Both Butts had long plateau's. Took the first one out at 10:00PM and coolered for an hour and pulled at 11:00 pm. Took the second one out of the smoker and finished in the oven. Put second one in the cooler at 12:00 PM and pulled at 1:00 AM.
Had some of the pulled pork for lunch today and it was super. Both butts had great bark on them and a great smoke flavor. I spritzed them with a half cup of Barcardi Rum and a cup and a half of apple juice about every hour or so. Didn't have any Capt. Morgan.
