Tofu

    Please before you judge me. My son has egg allergy and it works as a replacement for eggs.

    Plus I got dared to do it by CO workers.

    Thinking cold smoking. Got extra firm.

    Sure, blame it on your son.  Next thing we know, you'll be eating nuts and twigs and have your arms wrapped around some tree.  LOL[​IMG]

    Ha. He is allergic to nuts too.

    Not trying to eat twigs thou.

    Adam that is interesting using Tofu in place of eggs, never tried smoking it.I have used Tofu in Chicken soup it pulls the flavor right in,so watch it when you try to smoke.post it up when you doGood Luck

    Adam I have smoked tofu for my wife. The results were mixed. A really light smoke is fine, anymore than a hour seems to be too overpowering. Apple and peach were favored over cherry or alder. Much like cheese a couple day rest was best even with the short smoke time.

    The wife will use it for baking instead of eggs.   
     

  8. I was allergic to a lot of things as a kid. Never had to eat tofu though. People might give you a bit of hard time for it but good job stepping up for your boy! Who knows, maybe you will start a new trend...not counting on it though.

    See we don't HAVE to eat it. You know how hard it is to bake a cake without eggs????

    We choose to eat some tofu. I am looking for ways to improve it.

    Trust me, if it wasn't for my son I wouldn't be doing this.

    Adam...Tofu is a Protein with a lot of Moisture...Aka...A Prime Bacterial Growth Medium. Treat it like smoking any other cooked meat...JJ

    BTW...I never Smoked it but I LOVE TOFU and eat it all the time in Asian dishes...

    So in order to cold smoke, it needs to be under 40 degrees

    Less than 40 is the best choice if using Tofu in a process like thickening something or making Faux Mayo.  But as others have said, it don't take long to get smoke on it. If you will be cooking it further after smoking, like intact meat, an hour of ambient smoke with follow up cooking asap, you should be fine. Extra care in handling is called for...JJ
