Todays Stuffed Stuff

    Nothin really new or exciting but made up about 6 pounds of slicing boloney today along with 5 pounds of boloney dogs. I also had some Cumberland mix that was in the freezer from a couple weeks ago when I ran out of casings....made some chipolatas (little sausages) out of them...
    The big boloney was poached on the stove and will be slice thin for sammies and thick for breakfast and dinner steaks [​IMG]

    I cold smoked the hotdogs for a few hours then poached them on the stove to 150°.

    The chipolatas I'm thinking will be nice wrapped in bacon and tossed on the smoker then some sort of hot/sweet sauce for dipping. Still thinking about that one.

    Oh and that big 38mm stick, I ran out of hotdog casings again so I finished the batch off with some collagen that I had handy.

    Looking great Dan - I really need to get on the hot dog gig. I just ordered some Chicago relish and sport peppers this week

    Nice Dan! How come you don't smoke the balogna before poaching?

    Never had any luck get smoke through a thick fibrous casing....

    Use a casing pricker to open it up. These little holes allow smoke to penetrate pretty good.

    Good idea Brian, but then when I poach them they'll have leaks. but I might try it next time anyways. [​IMG]

    Now if you were in Kingston or Cornwall it wouldn't be too bad!
    Great job, Dan!  If I can ever get my endurance up I'll certainly go back to making some too.  Need to get my sister in Pulaski to ship me a bag of Hofmann's!

    Hey Pops say the word and I'll ship them out to ya no problem. After I master the Meier & Ranz coney ( or the way I remember it anyway) I'm going after the hofmanns Snappy griller. Oh and let me know if you want some Medfords mustard to go with the dogs. I think I can still get that.

    Hey Robert I'm laid off for a couple weeks, Do ya have a couch I can sleep on? Oh wait you go about 24-7 at the shop, maybe I'll just visit... thanks anyways.[​IMG]
