Today's Smoke w\ Qview

    First of all anyone who hasn't tried an ABT you need to. Tonight was my first one and sorry no Qview, we ate it right off the smoker, but here is the rest.....

    First try at deer sausage...

    I don't know why it's like this , but I'm not going to try to fix it, sorry I'm drunk, It's been a long day of drinking.

    can i ask what you filled with? and also - when did you add cheese to the top?

    Man, looks fantanstic. There is nothing like a full smoker. I think I will try a pizza fatty next, it looked great. I also really want to try making my own sausage. Do you have a manual or electric grinder/stuffer?

    Pizza Fatty has pepperoni, canadion bacon, moz cheese and tomato sauce in it had some olives that I forgot about until after it was rolled I love em. Sausages turned out good a little dry but I think I cooked them a little long plus it's deer but they were still good, I used an electric grinder to stuff them which was a pain in the a**, but I already have some ideas to make it easier next time, like invite someone over who knows what the hell they are doing[​IMG] .     Everything looks damn fine from here. Stop kicking yourself about not knowing what you are doing. Thats how most all of us learned and are continuing to learn. Each time things get better, we learn more, pick up some tips, improve our gear and so on. You must be having fun, and as I said, it looks great from here.[​IMG]

    The beef is just the fattiest roast I could find, and yes I am having fun, I have a couple picky judges but they keep eating the grub so I know it has to be pretty good. Can't wait for the new sausage stuffer gotta do a little research first!!!

    Try adding some pork fat to your next batch, I think you'll like it.
