I just filled the ring past the top with R.O. and am using the soup can in the center method of starting it up.

    ( Thanks TYOTRAIN for the how to)

Hickory and mesquite chunks.

Put 10 kingsford briquettes in the chimney and fired it up.

Filled the can and pulled it.

All vents open,guru rigged up to keep it at 225.

The butt is very big 9.7 pounds and has been in the fridge coated with SPOG for  a day and a half.

The flash blotted out the guru read out..it's at 170...

As soon as it settles down the butt goes in an I am going to watch for a bit.

Then go to bed around 11. I usually wake up for the visit at 3am so I will check it out then.

Kinda strange doing it this way..so we shall see how the guru and WSM get along for a real long smoke.

Looking good at 165, now into the foil and back in.

You and your stinking picture of the Guru has me pricing one. Just what I didn't want to do, spend another $300 today on my habit. I have to ask.  Did you get the adapter for the WSM?  I'm wondering if that portion is really necessary.

Great looking butt, by the way.  It has me wanting a pulled pork sandwich for breakfast and I don't usually eat breakfast!

You need the WSM adapter for sure. I got an adapter for my BGE too.

To tell ya the truth...I could probably live without the guru. So far I have used it 4 times..it works flawlessly.

When I first got the WSM I was determined to run it and get used to the way it works before using the guru.

 The WSM works fine without it.

I do like the guru. It has a number of advantages. Makes using the WSM a lot easier.

After 2 hours rest it is still real hot.

It looks and tastes great..

This morning I put  4.5 pound pan of Stouffers M&C in and more mesquite.

Then I got busy grinding and stuffing 10 pounds of andouille.

Used new 38/42 casings from Syracuse casing Co. I will never buy hanks again.. These are the bomb!!

I also like the tubed casing went right on the stuffing tube..

10 more pounds are waiting til tomorrow...

One last picture...

I loaded the 18.5 WSM last nite. Fired it off about 9:30.

It maintained 230-240 until noon today.

I used less than 10 pounds to fill the ring.

There's enough left to do another 5-6 hour smoke.

 I love this thing.

Great job.  Butts, then sausage, plus smoked mac & cheese.  I've been told the WSM is the way to go.  Obviously the guru makes it nearly foolproof, but I've heard people who state once you get used to the WSM it will hold steady for hours without any fuss.
