I brought some q-view to share with yall this evening. I smoked 4 racks a baby back ribs and some of Dutch's wicked beans. It was my first attempt at the beans. I tell ya, those beans are awesome. I was a little hesitant about adding pineapple at first, but I added it anyways. And Im sure glad I did. Pineapple goes good with baked beans. Who'd a thunk it?
Mama made her Irish potato casserole/salad, some corn on the cob and her homemade bbq sauce. She makes a darn good TX style vinegar based bbq sauce. It puts the icing on the cake if ya know what I mean.

Taking them off the smoker. They were smoked with pear wood for 5 hours with no foil.

Did you put some sauce on them?? They look really good! How were they with the no foil system?

Thanks everybody. They sure were good. I made them just for me mama and the little one. I had 3 racks leftover so I brought them to work today. Nobody knows it yet, but everybody is eating ribs and wicked beans for lunch today.

I used homemade sauce as a mop for the last 2 hours of the smoke. They were great with no foil. I didnt foil them because I like some bite to my ribs. Foil tends to make them a little too tender to my liking.

Ron, I asked mama for the recipe so I could share it with yall. But she said she doesnt have a recipe, that she does it all by taste. But she did give me the basics.

6 medium sized potatoes - cut & boil
about 8 pieces of bacon - fried & chopped
1 - 1.5 cups sour cream
1 - 1.5 cups cheddar cheese
4 chopped green onions (chives)
salt & pepper to taste
maybe some garlic powder....she didnt add any but I bet it would be good.

load it all into a big pot and commence to mashing to desired consistency. I like mine kinda lumpy.
