Todays menu:Ribs, salmon and my first ABT's

    Finally have a free Saturday to try stuff out. I have been going crazy reading everything I could here and looking at everyones delicious q-view, and now it's my turn again !!!

    Today I'm doing a rack of ribs (St. Louis style?, not babybacks.) A nice cedar plank salmon filet and my first attempt at ABT's

    Heres my ABT ingredients. The wife isn't crazy about jalapino's so I got 2 big italian sweet peppers to make for her. I stuffed them with mascarpone and colby jack cheese and some sauteed sweet vidalia onion and fresh garlic.

    Here they are after assembly. I stuffed scali bread in the tops of the big peppers so the cheese wouldn't leak out. On the jalapinos I tried to use the bacon to cover the tops to prevent the same thing.

    Here they are going on the smoker. Those are my ribs all foiled up in the "2" of the 3-2-1.I didn't bother wasting my time and your bandwidth with pictures of the rib prep since everyone knows what rubbed ribs looks like(Plus I forgot to take a pic) I also forgot to buy apple juice to spray on them here so I used a little Lipton lemon iced tea. Should be ok.

    Heres my salmon all rubbed and ready to go on in about 2 hours,if my timing is on.

    Very nice, would like to hear about the salmon also. If you don't have any apple juice, Coke is another good substitute.

    Results pics finally. Sorry it took so long. Had to deal with some real life crap. (Someone stole a box of new checks out of the mail and drained about $350 out of my account before I noticed. Spent about 3 hours at the bank and police station. NOT FUN.)
    But on to the good stuff. Heres the salmon ready to go on the grill. Soaked the cedar plank in warm water for about 2 hours beforehand.

    Heres my first 3-2-1 ribs being sauced and caramelized. These were the juciest most tender ribs EVER. I will never cook them by any other method again.

    Here are two of my favorite bottled things. Bonesuckin sauce and LongTrail Double Bag beer. 7.2% alcohol content makes cooking fun.

    Heres the ferocious "Brady" the guard dog. Named for the best QB on the planet Tom Brady. We got him on Superbowl Sunday the year we beat the Eagles. GO PATS !!!

    Nice smoke ring and the most moist, juicy tender ribs ever. A big thank you to whoever came up with 3-2-1. You are my hero.

    Here are my finished ABT's. These were delicious and I now see why they are so popular here. I will definetly be making these often. Can't wait to experiment with different fillings.( Lobster?,shrimp?,rice?)

    And finally the finished salmon. Cedar plank salmon has become one of my favorite fish dishes now. This piece came out nice and tender. Cooked for about 12 mins on high, skin side down. Some fresh squeezed lemon before, during, and after the cook. Very simple and delicious.

    Except for the whole stolen checks thing and possibly losing $350, not a horrible weekend. [​IMG]

    I guess Brady's OK, being a dolphin fan[​IMG]. Your BBQ on the other hand has the look of a champion. Great job.

    Also glad to see someone around here know what good beer is! I was begining to think you all drank budwater!

    I noticed the same thing. Microbrews are far and away better products than most of the big boys. I love discovering new brews. Some of my other favorites are RedHook, Wachusett Blueberry, and Ipswich Ale. Can you recommend me something different to try Debi? I see that you homebrew also. I made my own a few times but I wasn't as good at that as I am on the grill and smoker.

    Have you tried ...

    Long Trail Ale made by the same outfit as Double Bag from VT
    10 Penny Ale It's pretty good a scottish ale made here in CT
    Yuengling Black and Tan from the oldest brewery in the US fro PA
    Bass Ale isn't to bad in a pinch
    Dos Equis - Mexican cervaza
    Harpoon IPA is pretty good (mine is better though [​IMG] )
    Wee Heavy Scotch Ale - CA
    Arctic Red - Canadian
    Bell's Best Brown Ale - MI (excelent but seasonal)
    Redhook Winterhook - (seasonal)
    Pumpkinhead Ale - MA
    Gritty McDuff 's Scottish Ale - ME
    Gritty McDuff 's Best Brown Ale - ME
    Dirty Penny Ale - CT (Black and Tan)
    Molson *** - Canadian Can't post a triple x

    Gosh there's alot of good ones - I like dark and malty beers best!

    me thinks debi DO need to have a tasting w/ me in summersville.... now i know i gotta get my beer right.....i'm thinking a marzen w/ a honey/caramel not too sweet but w/ a lil' (nip-not a bite).... maybe better for marinade than drinking....of course they do make moonshine here.....

    I discovered that Winterhook this past Christmas and I fell in love with it. I too am a fan of darker beers. I had a chocolate beer once that was very good. I wish I could remember the name.

    I think there needs to be a beer thread.[​IMG] What forum would be a good place to start one?

    Another great microbrewery is in Ybor City near Tampa Florida, the brew I liked was YBor Gold. [​IMG]
