Today's Meatloaf (my own concoction)

It has been way to long since I have done a meatloaf, so here it goes here is the recipe that I have come up with.

Recipe:

3# of 80/20 ground beef
1# sage sausage
1 cup chopped onion (1 medium onion)
4 cloves fresh garlic, finely chopped
2 Tblsp. worcestershire sauce
1 pkg. lipton soup mix
1 16oz. can French's french fried onions (crushed)
2 eggs lightly beaten
1 cup bread crumbs (I use 4-C bread crumbs)
½cup brown sugar (packed)
1 tsp. ground coriander
1 tsp. salt
1 tsp. fresh ground black pepper



This made a 6# loaf, I may split this into two loaves. What do you think?
 
I'd split it into 2 loaves. Sounds like it is going to be some tastey stuff. Let us know how it comes out... don't forget the pics.
 
I think I will split it in half, that only means twice the smoke ring......correct

I am going to get the loaves smokin as soon as my Canadian Bacon comes out. Which is wright around the corner.

Yepper defenitly 2 loafs..... one for just you and one for me, let me know when they're done. Thanks for the recipe. That's another reason I like fourm. I must have 4 or 5 recipes for meat loaf. so even though I'm smoking a meat loaf again, it won't be the same.
 
Looks great and sounds great.

Two things I have gotten hooked on, since joining the forum is Meatloaf and ABT's. A zillion ways to do both so you never get bored.

I think I will try your recipe next.

Here is the meatloaf cut in half and reformed. They have been in the smoke for about 1½ hrs.

This is what we all like...............the Q-view




While I was at it I decided to try something different with a fattie, instead of just tossing a plain one in the smoker. I mixed 2 Jim dean Maple fatties together, rolled flat and placed some mozzarela cheese inside.

Here it is ready to roll back into a fattie



Here is the custom monster fattie, next to a bone stock fattie.

Brian, isn't it funny how big they get after you add just a little bit of extra's. Sometimes it looks like they turn into a skinny meatloaf.
 
I know what you mean Michael, My wife walked in the kitchen, and said......what....the....hell....... is that thing. Once I explained she was excited to taste it.
