Speak to us !!! I'm also very curious about the difference...taste, tenderness, dryness, etc. They both look great .
 
Didn't mean to leave everyone hangin, I just got back from the fish fry I helped with. Cooked 75 pounds of catfish filets + fries, hushpuppies and had fried jalepenos and fried greenbeans as apps.

Back to the Q:

The foiled rack should have been pulled off sooner. I did 2,2,1 on both and the foiled probably should have been 2,1,1 or some variation thereof. Felt like it had too much pull and maybe a little overly done for my tast. The none foiled rack was noticably more tender. Taste was adequate on both not my best and not my worst...I guess that is why it is an art and not a science!
 
Good post Trent! I'da thought the foiled would be more tender. I've always foiled, now I'll do some experimenting!

Nice q-view. Ribs look great. Looks like the foiled ribs woulda been more tender. Foiling usually makes them fall off the bone tender. I never foil mine cause I like a little bite to them. Foiling makes them too mushy for my liking.
