Im busy making my mods to my three new silver smokers but meanwhile im still keeping busy with the old electric. Looking forward to my first experiences with charcoal and alas any sort of smoke ring...

Out in the tropical heat..

In the phot visible are 2 papaya trees ,2 bananas a mango and a kaffir lime in the pot on the stoop.
Yea, the electric just dont put out no ring. Ive thought about throwing a coal or two in there to see how much it would take to give me something but tatse wise I gotta say these were by far the best damn ribs I ever smoked. the smoke was right on, 1hour of hickory, 1 hour 20 minutes of cherry, finished them in the smoker unwrapped at 190 dgrees and still the meat had a bite left in it. Anyone ever smoke with mango wood?
 
slow and painful. Still waiting for the tuner plates I ordered. Just picked up 6 thermometers. Spent an hour at homedepot looking for heat proof silicone, left with nothing. Anyone know if one package of 7ft oven gasket is enough to do one silver smoker door off hand? Im pretty excited though, I dont want to season them till I get the silicone in place. Does your disposable baffle actually do its job? Especially in conjunction with a convection plate I should be ok right? Oh boy I cant wait to build my first fire. Ill be doing 6 briskets and 30 racks of st louis. With no net.
 
Not as good as your convection plate will. I actually...finally...started messing wth the real baffle this weekend. Should have it in by Sat.
