To Soak or not to Soak ?

Howdy, I just bought a new Masterbuilt 30" electric smoker, my first smoker ever. I started off with a chicken last week, turned out OK. Yesterday I moved up to a Butt Roast for "pulled pork." Now here's my questions. My son says you don't have to pre-soak your chips, just throw them into your burning pan "dry". Is this the right way or not? My other question is when do you add more? When they're completely all burned up and turned to ash, or dump them after an hour and add new.
 
First, Welcome...Head over to Roll Call and give some details about yourself...Your son is correct. it's not necessary but there are members that do...You add more when they start getting Ashy...Some members like to Push the still smoking chips to one side, Quickly you don't want to loose to much heat, and Dump a fresh load for good continuous smoke at all temps...JJ

You don't need to soak the chips.

You will however need to add chips every 30 minutes or so.

You can solve this with an A-MAZE-N smoker. It will give you consistent smoke for up to 12 hours without refilling it.

Here is a link, I would suggest the pellet smoker.

Most of the guys with a MES use one of these little guys.
 
 when ya cant see any smoke coming out the vent. Or get a good smell of smoke , then it's time to add another hand full of chips

I just placed my order for a AMNPS based on the reccomendations on this forum. I can't wait to use it in my new MES 30, it should make getting the smoke I want much easier.
 
Hooter, soaking the chips tends if cause white smoke as they smolder. Best shot is to place a "few" at a time after you get rolling, that way you don't choke the Smoker(have a lot of chips that won't light because of not enough air).

And be sure to use safe cooking, when you stick your meat , use a clean/sanitized tool.
