To pickle or not to pickle..? The slaw is in question

  1. Being from the south Dukes mayo has always been king of the spreads. When it comes to slaw, my dad was always the slaw king. I can remember him making tubs of slaw for the big dinners they would have at the factory he worked at for 40 yrs.

I love a good pickled slaw with my pulled pork and shrimp po boys. A quick forced pickle refrigerated for a couple hours and I am happy.

    Lets get started

1 medium head of cabbage sliced thinly (add any other vegies you want)

    2 oz malt vinegar

    6 oz rice vinegar

    1/2 tsp white pepper

    3 tblsp brown sugar

    1 tsp salt

    A dash of hot sauce

    2 tsp lime concentrate

Combine all ingredients in a small pot and heat until sugar and salts are dissolved. Cool drizzle over your cabbage mixture

So this recipe is actually a dressing for Coleslaw (raw cabbage)...Right?

When you wrote that your dad made tubs of slaw I wasn't sure if you were referring to Coleslaw or sauerkraut .

    Thanks,

    John

We like to use this recipe in the summertime. A refreshing change to mayo based slaw.
